DESIGN TECHNOLOGY DEPARTMENT- Hospitality - Practical Cooking, Health and Food Technology and Short Course

The web pages for the Department are currently under development by staff. Any content regarding course costs for practical work, recipes and any other related information relating to courses will be updated throughout the academic year 2016 - 17. For further information please contact the Department via the school's usual contact procedures. Currently the Department offers courses in cooking from S1 to S6:
  • S1 2 periods per week. The course runs on a rotation basis within the Design Technology with pupils following an 11 week course in Woodwork, Metalwork and Food Technology. Pupils move between each subject at the end of each 11 week period. During Food Technology pupils cook a range of dishes that enable them to gain knowledge in safety, hygiene and nutrition, as well as developing their practical skills in food preparation techniques  and cookery processes.
 

  • S2 1 period per week. The S2 Food Technology course builds upon the knowledge and skills acquired in S1. Pupils study 4 main topics during S2 - Hygiene, Nutrition, Labeling/packaging and Cultural cooking.
 

  • S3 3 periods per week. The S3 Broad General Education (BGE) course in Hospitality prepares pupils for their National 5 course choices for S4. The topics covered relate to Health and Food Technology and Hospitality - Practical Cooking.
 

  • S4 4 periods per week. Pupils have the option to study either Health and Food Technology (HFT) or Hospitality - Practical cooking (HPC) at National 4 or 5 level. HFT is predominantly a theory based subject covering Nutrition, Product Development and Contemporary issues within food. Practical work is on an occasional basis. HPC offers more practical based work and is designed to develop pupils food preparation techniques, cooking ability and organizational skills. There is also a theory based element within the course designed to develop pupils knowledge of Healthy Eating, use of sustainable ingredients and food costing. 
 

  • S5/6 5 periods per week. Pupils have the option to further study Health and Food Technology at Higher level. Pupils who did not study food courses beyond S2, also have the opportunity to return to the Department and follow National 5 Health and Food Technology or attempt a 'crash Higher'. Hospitality - Practical Cooking at National 5 is also available. This option has become very popular with senior pupils wishing to learn how to cook for a life skill before going off to University.
 
  • Short course:
  1. In S5/6 pupils have the choice of 1 short course that they can follow for 2 periods per week for half of the school year. The department currently offers Craft Baking and Cooking on a budget (only one course runs per year, pupils must check with PT to find out which one is running prior to signing up) to pupils. This is an independent learning course which allows pupils to research recipes and carry out practical work on goods that they choose to make. Pupils have to plan their work, purchase their own ingredients and carry out the task within 1 double period or over several weeks if required.
